Investigators are considering replacing synthetic stabilizers with organic ones by investigating EPS fermentation-based dairy Particularly for enhancement rheology fermented items, is being used. EPSs considered a natural texturizer good alternative other artificial or new biopolymers foodstuff gelling agent suspending thickening food. These used abundantly industrials quality improvement. The main viz. dextran, xanthan, pullulan, gellan, curdlan, scleroglucan versatile reputation various processing applications review discusses distinctive physical properties that mainly determine their application industries health benefits EPSs.
